As testing procedures improve, so does the number of people identified who react to dietary gluten. When I went to school in the 70's gluten intolerance was studied as a curiosity and estimated to be about 1:5000. Then small intestine biopsies increased that rate to maybe 1:140. Now with good antibody testing in blood and stool samples and with current genetic testing, the rate has risen to an estimated 1:15 or more in the American population. This means that if you have any type of auto immune or any type of chronic inflammation, the chances are close to 100% that gluten sensitivity is part of your world.
